Pedernales River Chili

  1. Heat oil in a large pan or Dutch oven.
  2. Saute onion and garlic until fragrant.
  3. Add ground meat and stir over heat until cooked through.
  4. Add remaining ingredients, except the salt.
  5. Bring to a boil, then reduce to a simmer and cook for about an hour, skimming often.
  6. Adjust seasoning, and serve.
