Pedernales River Chili
- 4 lb Ground meat
- 1 large Onion
- 2 clove Garlic
- 1 tsp Oregano
- 1 tsp Ground cumin
- 6 tsp Chili powder
- 1 1/2 cup Whole canned tomatoes
- 1 as needed Hot sauce
- 2 cup Water
- 1 as needed Salt
- Heat oil in a large pan or Dutch oven.
- Saute onion and garlic until fragrant.
- Add ground meat and stir over heat until cooked through.
- Add remaining ingredients, except the salt.
- Bring to a boil, then reduce to a simmer and cook for about an hour, skimming often.
- Adjust seasoning, and serve.
