1001 Peanut Butter Cookies Recipe

• 3 c. 1001 Cookie Mix
• 3/4 c. peanut butter
• 1 x egg

1. Just one of the many different types of cookies made from the master cookie mix.
2. Preheat oven to 375 F. Grease cookie sheets.
3. In large bowl, mix together all ingredients.
4. Shape dough into 1-inch balls.
5. Place 2 inches apart on prepared cookie sheet.
6. Flatten in crisscross pattern with fork dipped in flour.
7. Bake about 10 min or possibly till edges are lightly browned.
8. Cold slightly; remove from cookie sheet and cold on wire rack.
9. Makes 48 cookies.

11. Butter Stars: Roll balls in sugar.
12. Place about 2 inches apart on greased cookie sheet; don't flatten.
13. Bake till edges are lightly browned, about 10 min.
14. Immediately press 1 lowfat milk chocolate star firmly in each cookie.
15. Cold slightly; remove from cookie sheet and cold on wire rack.
16. Makes 4 dozen cookies.
17. Peanut Butter and Jelly Cookies:Shape dough into 1 inch balls.
18. Place about 2 inches apart on greased cookie sheet.
19. Bake about 10 min.
20. Remove from oven and flatten with a spatula.
21. Cold slightly before removing from cookie sheet; cold completely on wire rack.
22. Put cookies together in pairs with jelly.
23. Makes 24 sandwich cookies.
