Focaccia Lobster Rolls
- 12 cup mascarpone cheese, room temp
- 14 cup extra virgin olive oil
- 1 teaspoon lemon juice
- 1 garlic clove, minced
- 12 lb lobster meat
- 5 Italian rolls
- 2 tablespoons tarragon, chopped
- 2 tablespoons chives, chopped
- In a medium bowl stir together the mascarpone and evoo until combined and smooth.
- stir in herbs, lemon juice, garlic, salt and pepper.
- cut the lobster meat into nice big chunks.
- add the lobster to the herb sauce and toss to coat.
- divide the lobster mixture among the rolls and serve immediatly.
