Chipotle Chicken Mac & Cheese

  1. Blend 1 undrained can tomatoes, garlic and peppers in blender until smooth.
  2. Reserve 1/3 cup tomato mixture; set aside.
  3. Drain remaining can tomatoes; set aside.
  4. Heat dressing in large skillet on medium-high heat.
  5. Add onions; cook and stir 3 min.
  6. or until crisp-tender.
  7. Remove onions from skillet.
  8. Add chicken to skillet; cook on medium-high heat 1 to 2 min.
  9. on each side or until lightly browned.
  10. Top chicken with remaining tomato mixture, drained tomatoes and onions.
  11. Bring to boil; cover.
  12. Cook on low heat 15 min.
  13. Top with cheese; cover.
  14. Cook 5 min.
  15. or until cheese is melted and chicken is done (165 degrees F).
  16. Meanwhile, prepare Dinners as directed on package.
  17. Stir in reserved tomato mixture.
  18. Cook until heated through.
  19. Top with cilantro.
  20. Serve chicken over Dinners.
