Chipotle Chicken Mac & Cheese
- 2 cans (14.5 oz. each) diced tomatoes, divided
- 1 clove garlic
- 3 chipotle peppers in adobo sauce
- 2 Tbsp. KRAFT Zesty Italian Dressing
- 1 large onion, cut into wedges King Sooper's 1 lb For $0.99 thru 02/09
- 6 small boneless skinless chicken breasts (1-1/2 lb.)
- 1-1/2 cups KRAFT Shredded Triple Cheddar Cheese with a TOUCH OF PHILADELPHIA
- 2 pkg. (7 oz. each) KRAFT Macaroni & Cheese Dinner
- 2 Tbsp. chopped fresh cilantro
- Blend 1 undrained can tomatoes, garlic and peppers in blender until smooth.
- Reserve 1/3 cup tomato mixture; set aside.
- Drain remaining can tomatoes; set aside.
- Heat dressing in large skillet on medium-high heat.
- Add onions; cook and stir 3 min.
- or until crisp-tender.
- Remove onions from skillet.
- Add chicken to skillet; cook on medium-high heat 1 to 2 min.
- on each side or until lightly browned.
- Top chicken with remaining tomato mixture, drained tomatoes and onions.
- Bring to boil; cover.
- Cook on low heat 15 min.
- Top with cheese; cover.
- Cook 5 min.
- or until cheese is melted and chicken is done (165 degrees F).
- Meanwhile, prepare Dinners as directed on package.
- Stir in reserved tomato mixture.
- Cook until heated through.
- Top with cilantro.
- Serve chicken over Dinners.
