Gabriel Bremer's White Gazpacho
- 1/2 day-old baguette
- 4 c. green grapes
- 3 c. whole blanched almonds
- 1500 mL mineral water
- 5 clove garlic
- 8 tbsp. Spanish olive oil
- 5 tbsp. sherry vinegar
- Sea salt
- white pepper
- Thinly sliced radishes
- green grapes
- toasted almonds
- Slice half baguette into 1-inch slices and place into a large mixing bowl with 4 cups tap water.
- Let soak until soft (this will take approximately 5 to 10 minutes).
- In a blender add the almonds, mineral water, garlic, and grapes and process until smooth.
- (You may have to do this in two batches.)
- Add the softened bread, olive oil, and vinegar to this mixture and process once again until smooth.
- Pass the soup through a fine strainer and season with salt and pepper.
- Chill 1 hour before serving.
- To garnish soup add thinly sliced radishes, grapes, and toasted almonds.
