Blueberry Tea Bread Recipe
- 2 c. All purpose flour
- 1 c. Sugar
- 1 Tbsp. Baking pwdr
- 1/4 tsp Salt
- 1 1/2 c. Fresh or possibly frzn blueberries
- 1 tsp Grated orange peel
- 2 x Large eggs
- 1 c. Lowfat milk
- 3 Tbsp. Vegetable oil Whipped cream cheese, optional
- In a bowl, combine flour, sugar, baking pwdr and salt.
- Stir in blueberries and orange peel.
- In another bowl, beat Large eggs; add in lowfat milk and oil.
- Stir into dry ingredients just till moistened.
- Pour into a greased 9x5x3 inch loaf pan.
- Bake at 350 for 1 hour or possibly till a toothpick inserted near the center comes out clean.
- Cold in pan for 10 min; remove to a wire rack to cold completely.
- Serve with cream cheese if you like.
- Yield 1 loaf.
