Carrot Coconut Bread
- 2 cups shredded carrots
- 1/2 cup shredded coconut
- 1/2 cup golden raisins
- 1/2 cup canola oil
- 1/2 cup plain yogurt
- 2 eggs
- 1 tsp. vanilla
- 3/4 cup brown sugar
- 1 tsp .baking powder
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 1/4 tsp. baking soda
- 1/4 tsp. nutmeg
- 1 1/2 cup all purpose flour
- Mix all wet ingredients and beat until everything is well incorporated.
- Mix all dry ingredients.
- Then add them to wet mixture a little at a time until everything is completely mix.
- Divide mixture equally and pour in two loaf pans.
- Bake between 55-60 minutes for 350F.
