Veggie Chili Frito Pie
- 2 Tablespoons Extra Virgin Olive Oil
- 1 pound Vegetarian 'Meat' Crumbles
- 1/2 whole Onion, finely chopped
- 1 clove Garlic, Finely Chopped
- 1 Tablespoon Chili Powder
- 1 teaspoon Ground Cumin
- 1 can (15 Oz. Size) Black Beans
- 1 can (15 Oz. Size) Red Beans
- 1 can Tomatoes With Green Chilies (10 Ounces)
- 1 dash Salt To Taste
- 1 dash Pepper To Taste
- 1/2 cups Cilantro, Chopped
- 3 cups Pepper Jack Cheese, Shredded
- 1 bag Fritos Corn Chips (12 Ounces)
- Heat the olive oil over medium-high heat.
- Add veggie crumbles onion, garlic, chili powder and cumin and cook over medium-low heat for 5 minutes.
- Add the beans and tomatoes; bring to a simmer.
- Cook, stirring occasionally, about 15 minutes.
- Season with salt and pepper.
- Place a handful of Fritos into each bowl, top with chili, pepper jack cheese and cilantro.
