Veggie Chili Frito Pie

  1. Heat the olive oil over medium-high heat.
  2. Add veggie crumbles onion, garlic, chili powder and cumin and cook over medium-low heat for 5 minutes.
  3. Add the beans and tomatoes; bring to a simmer.
  4. Cook, stirring occasionally, about 15 minutes.
  5. Season with salt and pepper.
  6. Place a handful of Fritos into each bowl, top with chili, pepper jack cheese and cilantro.
