Easy Chicken and Dumplings
- 1 small cooked rotisserie chicken
- 2 58 ounces country gravy mix
- 10 ounces chicken gravy
- 12 ounces buttermilk biscuits
- 10 ounces frozen peas and carrots
- 1 cup chicken broth
- 12 cup onion, chopped
- 1 teaspoon thyme
- Pick chicken clean and discard carcass.
- Add all ingredients except biscuits to a big pot.
- Bring to a boil.
- Turn heat down to medium and simmer 25 minute.
- Quarter biscuit dough, roll into balls, and drop into stew.
- Cover and simmer 15 more minutes, or until biscuit dough is cooked through.
