Chicken Pot Pie West Virginia Family Recipe
- 1 nice fat stewing hen (the fatter the better)
- 2 teaspoon baking pwdr
- 1 teaspoon salt
- 2 Large eggs
- 1/2 c. buttermilk
- 2 c. flour
- Cut chicken into pcs, cook over slow heat till tender.
- Makes a thin paste of flour and lowfat milk, stir in broth, making a gravy.
- (chicken may be removed, if you like) Sift together dry ingredients.
- In a large bowl beat together Large eggs and buttermilk, and add in dry ingredients to make a dough, roll out in pastry board, cut into 3 inch strips.
- Place in a large baking pan.
- Pour over this the gravy and chicken.
- Bake this 15 to 20 min at 450 degrees.
- For variation, some partially cooked vegetables may be added.
- Also dough strips or possibly biscuits dropped on top.
