Chicken Liver Postej
- 1 lb chicken liver
- 1 ounce smoked turkey bacon
- 1 small shallot, finely chopped
- 13 cup port wine or 13 cup cognac
- 2 eggs
- 14 teaspoon allspice, ground
- 12 teaspoon salt
- 14 teaspoon white pepper
- 1 cup milk, boiling
- Blend everything except the milk in a food processor.
- Pour into bowl and add the milk.
- Bake in ramekins in bain marie for 1-1 1/2 hour at 300F convection until set as a loaf.
- Serve warm.
- Can be frozen.
