Chicken Tacquitos

  1. Turn burner on to medium temp.
  2. As burner heats up, warm tortillas in pan until soft.
  3. Remove tortillas from pan, and while still warm, add chicken and cheese to both.
  4. Roll shut, as tight as possible.
  5. Pour 1/3 cup oil into hot pan, bring to boiling temp.
  6. Add tacquitos, with seam side down, to oil.
  7. Flip every 3 minutes, cook for total of 9 minutes.
  8. In small cup, combine taco sauce, honey, ranch, and dijon mustard.
  9. Whisk together.
  10. When fully cooked (cheese melted, chicken at 165F, tortillas are hard), remove tacquitos from pan.
  11. Gently wrap in paper towels to soak extra oil off for 5 minutes.
  12. Remove from paper towels, serve with sauce.
