Medallions of Chicken With Wine Sauce (heart-safe)

  1. Chicken:.
  2. Sprinkle pounded chicken breast halves lightly with pepper.
  3. Melt oil and margarine in large skillet.
  4. Saute the cutlets over medium heat until browned and tender.
  5. This should take about 5-8 minutes on each side.
  6. Remove cutlets from pan and keep warm.
  7. Sauce:.
  8. Blend flour with chicken drippings in skillet.
  9. Cook for 2 minutes.
  10. DO NOT brown further.
  11. Add milk, stock and wine.
  12. Cook and stir constantly, over med heat, till it thickens.
  13. Reduce heat to low, add tarragon and mushrooms.
  14. Return cutlets to pan and simmer for 1 minute.
  15. Serve immediately.
