Alligator Etouffee Recipe
- 2 x Onions minced
- 2 x Garlic cloves minced
- 4 x Celery ribs minced
- 1 can Rotel tomatoes
- 1 lb Alligator meat cut in thin strips
- 2 stk Butter
- 1/2 c. Minced green onions minced
- 1/4 c. Chopped parsley chopped Salt to taste Freshly-grnd black pepper to taste Cayenne pepper to taste
- 3 c. Rice cooked
- Saute/fry onions, garlic and celery in butter till soft.
- Add in Rotel tomatoes and simmer for 20 min in covered cast-iron pot.
- Add in alligator meat and let cook over low heat till tender, about 1 hour.
- If gravy is too thick, add in a little warm water.
- Serve over cooked rice.
