Alligator Etouffee Recipe

  1. Saute/fry onions, garlic and celery in butter till soft.
  2. Add in Rotel tomatoes and simmer for 20 min in covered cast-iron pot.
  3. Add in alligator meat and let cook over low heat till tender, about 1 hour.
  4. If gravy is too thick, add in a little warm water.
  5. Serve over cooked rice.
