Fun Cupcake Surprise

  1. Prepare cake batter and bake as directed on package for 24 cupcakes, blending 1 Tbsp.
  2. dry gelatin mix into batter before spooning into 24 paper-lined muffin cups.
  3. Bake as directed on package.
  4. Cool cupcakes in pan on wire rack 30 min.
  5. Meanwhile, stir boiling water into remaining gelatin in bowl 2 min.
  6. until completely dissolved.
  7. Refrigerate 45 min.
  8. or until slightly thickened.
  9. Cut 1/2-inch-round circle in center of cupcake to create a tunnel.
  10. Remove cake piece; crumble and reserve for later use.
  11. Spoon thickened gelatin into small resealable plastic bag; cut off one bottom corner, then use to pipe gelatin into holes in cupcakes.
  12. Refrigerate 2 hours.
  13. Spread cupcakes with frosting; top with crumbled cake crumbs and cherries.
