Cold Tofu with Chestnuts in Apple Dashi

  1. In a small bowl, whisk the apple juice with the shiro dashi, soy sauce, sherry vinegar and sesame oil.
  2. Arrange the tofu slices in shallow bowls.
  3. Top with the chestnuts and frisee.
  4. Pour the apple dashi around the tofu.
  5. (Reserve any remaining apple dashi for another use.)
  6. Drizzle each bowl with a few drops of wasabi oil and serve.
