Shallot Bruschetta
- 3 tbsp. olive oil
- 5 lg. shallots
- green onions, thinly sliced
- 4 slices french bread
- Romano cheese, freshly grated
- Black pepper, freshly ground
- Preheat broiler.
- Heat oil in a heavy small skillet over medium heat.
- Add shallots and saute until tender, stirring frequently, approximately 5 minutes.
- Broil one side of the bread until toasted.
- Spread shallot mixture on second side of bread.
- Sprinkle generously with pepper and cheese.
- Broil until beginning to brown.
- Serve immediately.
