Shallot Bruschetta

  1. Preheat broiler.
  2. Heat oil in a heavy small skillet over medium heat.
  3. Add shallots and saute until tender, stirring frequently, approximately 5 minutes.
  4. Broil one side of the bread until toasted.
  5. Spread shallot mixture on second side of bread.
  6. Sprinkle generously with pepper and cheese.
  7. Broil until beginning to brown.
  8. Serve immediately.
