Fried Rice With Sausage and Lima Beans
- 2 cups cooked rice
- 1 tablespoon butter
- 1 teaspoon canola oil
- 8 ounces fresh mushrooms
- 1 onion, chopped
- 1 cup lima beans, cooked
- 14 lb sausage (1 used 1 johnsonville pork sausage brat, hot flavor, casing removed)
- 2 eggs, lightly beaten
- 2 tablespoons soy sauce
- 1 teaspoon ponzu sauce
- 1 teaspoon poultry seasoning
- 1 teaspoon salt
- 12 teaspoon pepper
- Remove casing from sausage link.
- Crumble and saute in an iron skillet until no longer pink.
- Remove from skillet and set aside.
- Saute onion in same skillet for 5 minutes.
- Add mushrooms, butter and oil, if needed.
- Saute an additional 10 minutes, until mushrooms are softened.
- Add salt and pepper to onion mixture.
- To onion mixture, add cooked rice and poultry seasoning.
- Saute approx 5 minutes.
- Add soy and ponzu sauces.
- Stir.
- To rice mixture, add cooked sausage and lima beans.
- Saute 1 minute.
- Creat a well in the center of the skillet.
- Add beaten eggs.
- Cook until eggs are scrambled, approx 2-3 minutes.
- Incorporate eggs into the rice mixture.
- Serves 4.
