Sauteed Cabbage with Brown Butter and Poppy Seeds

  1. Cook the butter in a medium heavy skillet over moderate heat, stirring occasionally, until it turns golden and nutty and the flecks on the bottom of the pan turn a rich caramel brown, about 6 minutes.
  2. Add the cabbage and cook, stirring occasionally, until wilted and crisp-tender, 5 to 8 minutes.
  3. Stir in the poppy seeds and season with salt and pepper.
  4. Transfer to a bowl and serve immediately.
