Light'N Lean Chicken
- 4 chicken breast halves, boned and skinned
- 1/2 tsp. pepper
- 2 cloves garlic, peeled and halved
- 1 c. low sodium chicken broth
- 1/2 c. white wine
- 2/3 c. skim milk
- 1 tsp. Nature's seasoning blend
- 1 tsp. chives, chopped
- Spray large nonstick skillet with nonstick spray.
- Heat to medium and add chicken.
- Season with 1/4 teaspoonful pepper.
- Cook about 10 minutes, turning once, or until browned evenly.
- Reduce temperature and add garlic.
- Continue cooking 10 minutes or until chicken is tender.
- Remove chicken to serving plate.
- Add broth and wine to garlic cloves.
- Bring to a boil and continue boiling 5 minutes.
- Reduce heat.
- Combine milk and seasonings, add to cooking juices in pan.
- Heat and stir until slightly thickened. Return chicken to pan and sprinkle with chives.
- Baste chicken with cooking juices.
- Heat through.
- Very good with rice.
- Makes 4 servings.
