Spinach Dip
- 2 teaspoons Olive Oil
- 1 whole White Onion
- 2 whole Garlic Cloves
- 2 pounds Spinach
- 1/2 cups Milk
- 6 ounces, weight Cream Cheese
- 1 teaspoon Worcestershire
- 2 teaspoons Tabasco
- 3/4 cups Shredded Mozzarella
- In a large pan, heat oil over medium.
- Add onion and garlic; cook until lightly browned, about 5 to 8 minutes.
- Add spinach and cook until completely wilted, about 5 to 8 minutes.
- Transfer to a colander; drain, pressing to release all excess liquid.
- In the same pot, warm milk over high heat.
- Whisk in cream cheese until melted, about 3 minutes.
- Add spinach, Worcestershire sauce, hot sauce, and mozzarella; stir to combine.
- Season with salt and pepper.
- Simmer over medium low heat until ready to serve.
- Transfer to a serving dish and add pita wedges for dipping.
