Herbed Broccoli and Pasta Soup
- 5 12 cups vegetable stock
- 4 garlic cloves, minced
- 2 -3 teaspoons dried thyme
- 3 cups broccoli florets
- 2 14 cups fusilli, uncooked
- 2 -3 tablespoons lemon juice
- 14 teaspoon salt
- 18 teaspoon pepper
- Heat stock, garlic and thyme to boiling in a medium saucepan.
- Stir in broccoli and fusilli.
- Reduce heat and simmer, uncovered until broccoli is tender and pasta is al dente, about 10 minutes.
- Season with lemon juice, salt and pepper.
- Serve.
