Honey Smoked Ribs
- 1 rack of pork ribs
- 2 tbsp brown sugar
- 1 tsp salt
- 1 tsp powdered ginger
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp black pepper
- 1/2 tsp cinnamon
- 1/2 cup honey
- 1 tbsp soy sauce
- 1 tbsp apple cider vinegar
- 1 tsp lemon juice
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp powdered ginger
- 1/4 tsp salt
- 1/4 tsp cinnamon
- Remove the membrane from the back of the ribs and season with rub mix.
- Wrapped in plastic wrap and refrigerate for 24 hours.
- Set up your grill for Indirect Heat.
- First layout to small piles of unlit charcoal.
- Then light a chimney starter that is half full of charcoal.
- When it is ready add to the unlit charcoal.
- Then place a drip pan in the middle and fill with water.
- Place the seasoned ribs in the middle of the smoker over the drip pan.
- Add several handfuls of wet hickory wood chips to the hot charcoal.
- Smoke at 300F for about 2 hours.
- Mix the honey glaze sauce and set aside.
- When the meat has pulled back about 2 inches on the bone glazed with honey sauce and cook for 10 to 15 minutes.
- After 10 minutes or so glaze with honey sauce again.
- There's enough sauce to glaze 4 times.
- Let the ribs rest 15 to 20 minutes before carving and serving.
