Apple Streudel Muffins

  1. Preheat oven to 375 degrees .
  2. In a large bowl combine flour, sugar, baking powder, baking soda and salt.
  3. In another bowl combine eggs, butter, cinnamon and nutmeg.
  4. Stir egg mixture into dry ingredients just until moistened.
  5. (batter will be stiff).
  6. Fold in apples.
  7. Fill greased or paper lined muffin cups 3/4 full.
  8. In a small bowl combine streusel topping as follows-1/3 cup brown sugar, 1 tbsp all purpose flour and 1/8 tsp cinnamon.
  9. Cut into 1 tbsp cold butter until crumbly and sprinkle over batter.
  10. Bake at 375 degrees for 15-20 minutes until a toothpick inserted in the center comes out clean.
  11. Cool for 5 minutes before removing from pan to a wire rack to cool completely.
  12. In a small bowl combine the following ingredients for the glaze topping- 1 1/2 cup confectioners sugar, 1-2 tbsp milk, 1/4 tsp vanilla extract and 1/8 tsp salt.
  13. Combine all ingredients and drizzle over cooled muffins.
  14. Enjoy!
