Mango Chutney Recipe
- 4 lbs. mangos (or possibly peaches)
- 2 tbsp. white mustard seed
- 1 tbsp. chili pwdr
- 1 pound preserved ginger in syrup
- 2 lbs. sugar
- 2 quarts. vinegar
- 1 clove garlic
- 1 1/2 c. seeded raisins
- Peel and cut fruit.
- Add in 1 qt vinegar.
- Boil for a short time.
- Combine sugar and 2nd qt of vinegar and boil till it is a thin syrup.
- Pour most of liquid from fruit and add in to syrup.
- Boil till thick.
- Combine this with rest of ingredients except ginger and cook 30 min.
- Add in ginger into syrup and cook a few min longer.
- Bottle.
- Flavor is even better if placed in sun for a few days.
