Baked Macaroni And Tomatoes
- 1 pkg. macaroni cheese dinner
- 2 Tbsp. margarine
- 1/2 c. chopped onion
- 1 (1 lb.) can tomatoes
- 1 Tbsp. parsley flakes
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 4 slices (4 oz.) sharp Cheddar cheese
- Cook macaroni following package directions; drain and reserve for later use.
- In large skillet, saute onion in margarine just until tender.
- Add tomatoes, parsley flakes, salt and pepper; simmer, uncovered, for 5 minutes, stirring occasionally.
- Remove from heat.
- Stir in contents of cheese packet.
- Heat slowly, stirring constantly, until mixture is thoroughly blended.
- Gently stir in reserved macaroni.
- Pour into greased, shallow 2-quart baking dish.
- Bake in preheated 350u0b0 oven for 20 minutes; remove from oven.
- Top with cheese slices.
- Return casserole to oven for 5 minutes, or until cheese is melted.
- Serve immediately.
- Makes 4 to 6 servings.
