South Of Spain Sauce
- 2 medium Italian frying peppers or 1 medium green bell pepper, seeded, deribbed and finely diced
- 1/2 medium Vidalia or other sweet onion, finely diced
- 2 medium tomatoes, cored and finely diced
- 1/4 cup extra virgin olive oil
- 1/4 cup fresh lemon juice
- 2 teaspoons kosher salt
- Freshly ground black pepper, to taste
- In a medium bowl, combine all ingredients.
- Pour the mixture on top of the roe that has been poached in water.
