Beans O'le Recipe
- 1 pound pinto beans (presoaked)
- 7 c. water
- 3 pound pork roast (or possibly beef)
- 1/2 c. minced onion
- 2 cloves garlic
- 1 tbsp. salt
- 1 tbsp. cumin
- 2 tbsp. chili pwdr
- 1 teaspoon oregano
- 1 (4 ounce.) can green chilies, minced
- Mix all together, put lid on it.
- Bring to a boil, then simmer on low 5-6 hrs.
- Uncover and cook 1/2 hour longer.
