Broccoli Rice Casserole
- 1 pkg. frozen broccoli
- 1 can cream of mushroom soup
- 1 lb. Velveeta cheese
- 2 cups milk
- 2 cups minute rice
- 1 yellow onion
- Mix the milk and soup then add the broccoli, rice and onion.
- I like to add half of the cheese, cutting it into small chunks and mixing it in.
- I pour it all in a greased casserole dish then slice the rest of the cheese and place it on top.
- Bake uncovered at 350 for about an hour, stirring every fifteen minutes to evenly dispurse the melted cheese.
- Season to taste with pepper.
