One-Pan Eggplant Oven Bake
- 1 eggplant (1 lb.), ends trimmed
- 1 pkt. SHAKE 'N BAKE Garlic & Herb Seasoned Coating Mix
- 1 small zucchini, sliced
- 1 onion, sliced
- 2 Tbsp. KRAFT Zesty Italian Dressing
- 1/4 cup CLASSICO FAMILY FAVORITES Traditional Pasta Sauce
- 1 cup KRAFT Shredded Mozzarella Cheese
- Heat oven to 400F.
- Line 13x9-inch pan with foil.
- Cut eggplant into 1-inch-thick slices; moisten with water.
- Add, 1 at a time, to coating mix in shaker bag; shake until evenly coated.
- Place in single layer in prepared pan.
- Discard bag and any remaining coating mix.
- Add zucchini and onions to pan along with the eggplant; drizzle with dressing.
- Bake 30 min.
- Top eggplant with pasta sauce and cheese; bake 5 min.
- or until cheese is melted.
