One-Pan Eggplant Oven Bake

  1. Heat oven to 400F.
  2. Line 13x9-inch pan with foil.
  3. Cut eggplant into 1-inch-thick slices; moisten with water.
  4. Add, 1 at a time, to coating mix in shaker bag; shake until evenly coated.
  5. Place in single layer in prepared pan.
  6. Discard bag and any remaining coating mix.
  7. Add zucchini and onions to pan along with the eggplant; drizzle with dressing.
  8. Bake 30 min.
  9. Top eggplant with pasta sauce and cheese; bake 5 min.
  10. or until cheese is melted.
