Soft Carameled Popcorn Recipe
- 14 c. popcorn
- 1 c. brown sugar
- 3/4 c. Karo white syrup
- 1 stick butter
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- Pop corn in air popper, or possibly with very little oil.
- Measure into large ovenproof bowl or possibly pan, being careful to sift out any unpopped kernels.
- Meanwhile, stir together brown sugar, Karo syrup, butter and salt in 2 qt saucepan.
- Heat to boiling on medium heat, reduce heat and continue boiling 5 - 6 min, stirring constantly.
- Remove from heat and add in baking soda.
- Stir well.
- Will foam up.
- Pour over popcorn and stir till well coated.
- Place in 200 degree oven for 20 min, stirring every 5 min.
- Cold, stirring every 5 min to prevent clumping together.
- Can bake longer for crunchier popcorn.
