Chicken, Broccoli and Rice divan
- 2 boneless skinless chicken breasts (cubed)
- 1 12 heads broccoli
- 4 tablespoons Dijon mustard
- 4 ounces reduced-fat cream of chicken soup
- 8 ounces 98% fat free broccoli cheese soup
- 12 cup skim milk
- instant brown rice
- First, coat chicken with a pinch of salt and pepper and 2 tbsp of dijon mustard.
- In a large skillet coated with nonstick cooking spray, cook cubed chicken over medium heat.
- While chicken is cooking, steam broccoli.
- Once the chicken is cooked on the outside (about 5 min) add the cans of soup and the milk.
- Stir until clumps disappear.
- Stir in the remaining dijon mustard.
- Add the broccoli to the mixture.
- Reduce heat to medium-low and let cook together for about 10 minutes.
- Prepare rice according to the package.
- Serve the mixture over top of the rice.
