Modern Sausage Sandwich with Ginger and Mustard Relish
- 2 1/2 tablespoons prepared hot English mustard (such as Colman's)
- 4 teaspoons minced stem ginger in syrup* plus 2 tablespoons syrup from jar
- 4 6-inch-long linguica sausages or other fully cooked sausages, cut in half lengthwise
- Butter, room temperature
- 1 14-inch-long by 4-inch-wide piece of ciabatta bread or French bread, cut horizontally in half
- 2 large tomatoes, thinly sliced
- 2 large bunches arugula
- Mix mustard, minced stem ginger and 2 tablespoons ginger syrup in small bowl.
- Place sausages, cut side down, in large nonstick skillet.
- Cook over medium heat until heated through and beginning to brown, about 5 minutes per side.
- Spread butter over cut sides of bread.
- Spread mustard mixture over butter.
- Arrange tomato slices and arugula on bottom half.
- Top with sausages.
- Top with remaining bread.
- Cut crosswise into 4 sandwiches and serve.
- *Available at specialty foods stores and some supermarkets.
