Roger's Tortillas
- 2 lbs ground beef
- 20 corn tortillas
- 3 cups vegetable oil (for frying)
- 1 (10 ounce) can red enchilada sauce
- 1 head cabbage (grated)
- 1 12 cups Miracle Whip
- 4 tablespoons prepared yellow mustard
- 3 tablespoons sugar
- 1 (8 ounce) package sharp cheddar cheese (grated)
- chopped green onion (garnish)
- Heat vegetable oil in cast iron skillet until at temperature for frying tortillas.
- Fry corn tortillas, during process try to make them into a "bowl shape" by pressing tongs in middle of tortilla while frying.
- Heat skillet and brown ground beef until cooked and crumbled.
- Put enchilada sauce in pot and heat on stove.
- Grate cabbage and add Miracle Whip, mustard, and sugar to make cole slaw in a bowl.
- Mix until combined.
- Grate cheese and chop green onions for garnish.
- To eat, take tortilla and scoop in some ground beef, top with cole slaw mix, cheese, and a scoop of enchilada sauce.
- Garnish with green onions and serve!
