Coconut Roasted Sweet Potatoes

  1. Preheat oven to 400°F.
  2. If necessary, in a small saucepan, melt coconut oil over medium heat.
  3. Toss sweet potatoes with oil, salt, and pepper together in a bowl or sealed large ziplock bag until evenly coated.
  4. Spread sweet potatoes in a single layer on a large rimmed baking sheet.
  5. Roast, stirring occasionally, until tender, about 40 minutes.
  6. Transfer to a serving bowl and toss with lime zest.
