Adult Pimiento Cheese

  1. Force garlic through a garlic press into a large bowl and stir in pimientos with liquid in jar.
  2. Add Cheddar and toss mixture to combine well.
  3. Stir in mayonnaise to taste and season with freshly ground black pepper.
  4. Cheese spread may be made 1 day ahead and chilled, covered.
  5. Bring spread to room temperature before serving.
  6. Serve spread with accompaniments.
