No Bake Fresh Fruit Pie
- 1 12 cups Fiber One cereal, original
- 14 cup Earth Balance margarine, melted
- 1 lb tofu, extra firm, drained and pressed
- 12 cup agave nectar
- 1 teaspoon vanilla extract
- 4 kiwi, peeled and thinly sliced
- 1 pint blueberries
- 1 quart strawberry
- 14 cup peach preserves
- 12 lemon, juiced
- olive oil flavored cooking spray
- Spray a 9" pie plate w/ olive oil.
- Combine cereal and margarine in food processor and pulse until the crumbs are moisten.
- Press the crumb mixture into the pie plate.
- Set aside in the refrigerator.
- Mix tofu, agave nectar, and extract until smooth.
- Spread into the chilled pie crust and refrigerate for an hour.
- Arrange the fruit decoratively on top of the tofu mixture.
- Slowly heat the preserves and lemon juice until melted.
- Stir and drizzle over the fruit.
- Chill at least 1 hour to set glaze.
