Savory Zucchini Cake
- 1-18 ounce, weight Zucchini
- 1 Onion, Large
- 4- 1/2 ounces, weight Bacon
- 5 Eggs
- 1 cup Plus 1 Tablespoon All-purpose Flour
- 7 ounces, weight Cheese, Grated
- 2 teaspoons Baking Powder
- 1/2 cups Oil
- Garlic Powder, To Taste
- Salt And Pepper, to taste
- Preheat oven to 180 degrees C (350 degrees F).
- Grate zucchini.
- Chop onion and bacon.
- Beat eggs.
- In a large bowl, mix all the ingredients together.
- Season to taste.
- Pour mixture into a large baking tray (40 cm x 30 cm or 15.7 x 12 inches) lined with baking paper or greased.
- Bake for about 30 minutes, until eggs are set and cake is golden brown.
