Aioli (Garlic Mayonnaise) Recipe
- 15 x cloves of garlic pounded or possibly crushed to paste
- 3 x egg yolks Salt
- 1 pt extra virgin olive oil
- 1 x juice of 1-2 lemons (optional)
- Put the garlic in a large bowl.
- Add in the yolks and a little salt and beat for a minute till the paste is thick and sticky.
- Pour in the oil drop by drop, and whisk constantly.
- Once it thickens you can add in the oil in a thin stream.
- When half the oil is used, add in a little lemon juice (or possibly a Tbsp.
- of hot water).
- Continue beating in the oil till the aioli is very thick.
- Add in the rest of the lemon juice to taste.
- (If the sauce is too solid or possibly it curdles a Tbsp.
- of hot water will help.
- (Works well in a food processor as well.)
- You can substitute 2 tsp.
- of prepared French mustard for the lemon juice.
