Weeknight Easy Pasta & Tomato Toss

  1. In a large salted pot of water, cook penne according to package instructions less 1 minute.
  2. Drain but reserve 1/4 cup of the pasta water.
  3. Heat oil in a large skillet over medium high heat and add onion.
  4. Cook until translucent.
  5. Reduce heat to medium and add garlic and tomatoes.
  6. Season with salt and pepper.
  7. Cook for about 3-4 minutes.
  8. Add pasta and pasta water to the skillet.
  9. Add cheeses and stir well.
  10. Turn off heat.
  11. Add basil.
  12. Toss and serve.
  13. Often I will also add a sprinkle of pine nuts when serving.
