Garden-Fresh Gazpacho with Avocado Crema
- 1 fully ripe avocado Whole Foods 5 ea For $5.00 thru 02/09
- 1/2 cup light sour cream
- 2 Tbsp. fresh lime juice Safeway 3 ct For $1.00 thru 02/09
- 1/2 tsp. sugar
- 3 large tomatoes, seeded, chopped
- 1 yellow pepper, chopped
- 2-1/2 cups chopped English cucumbers
- 1 shallot, finely chopped
- 4 cloves garlic, minced
- 2 cups salsa
- 1-3/4 cups 25%-less-sodium chicken broth
- 1 cup vegetable juice cocktail
- 1/2 cup Kraft Calorie-Wise Zesty Italian Dressing
- 1/4 cup chopped fresh basil
- Mash avocado in medium bowl.
- Stir in sour cream, lime juice and sugar.
- Refrigerate until ready to use.
- Combine all remaining ingredients except basil in large bowl.
- Pour half into blender; blend until smooth.
- Add to remaining tomato mixture with basil; mix well.
- Refrigerate 2 hours.
- Serve gazpacho topped with avocado mixture.
