Baked Shrimp With Feta Cheese Recipe
- Gharithes Me Feta
- 2 med onions thinly sliced
- 1/2 c. extra virgin extra virgin olive oil
- 2 lb tomatoes, peeled and coarsely minced parsley, minced
- 2 tsp salt
- 1/4 tsp pepper
- 2 x cloves garlic
- 2 lb raw shrimp, shelled and de-veined
- 1/2 lb feta cheese parsley
- In iron skillet, saute/fry onions in extra virgin extra virgin olive oil till tender.
- Add in tomatoes, minced parsley, salt, pepper, and garlic.
- Cover and simmer for an hour, stirring occasionally.
- Put sauce and shrimp in 6 scallop shells or possibly individual fireproof dishes.
- Crumble feta cheese over shrimp and bake uncovered in a very warm oven for 8 to 12 min, or possibly till shrimp are cooked and cheese is melted.
- Garnish with parsley.
