Louisianna Chicken Duxelle (Microwave)

  1. Prepare a "Duxelle" by sauteing in butter the onions, mushrooms, and spices till onions are very soft.
  2. Pour the dry rice into a microwave safe casserole dish.
  3. Empty all of the "Duxelle" into the rice and stir a little.
  4. Add the boullion cube.
  5. Arrange chicken on top closely together and somewhat nested in the rice.
  6. Add the water.
  7. Sprinkle a little more seasoning on top.
  8. Place lid on casserole dish.
  9. Microwave 20 min on Medium (50%).
  10. Serve.
