Sicilian Linguini With Peppers and Onions
- 8 ounces ground sausage
- 3 tablespoons olive oil
- 2 minced garlic cloves
- 2 onions, chopped
- 2 red peppers (cut into strips)
- green pepper
- 2 tablespoons dry oregano
- 1 12 cups dry white wine
- 12 cup chicken broth
- 12 ounces cooked linguine
- 12 cup fresh parsley
- 3 tablespoons dry parmesan cheese
- 4 ounces feta
- fresh ground pepper

- Saute sausage until browned, then drain.
- 2. heat oil in skillet and add garlic, onions, pepper, and saute until softened
- 3. remove from skillet
- 4. in skillet bring wine and broth to a boil, and cook while stirring until
- liquid is reduced by half.
- 5. add sausage, peppers, and onions and mix.
- 6. after pasta is cooked, add the pasta, parsley, feta cheese, pepper, and parmesan cheese.
