Breakfast Broccoli Frittata with Cheddar
- 6 large eggs
- 1 cup whole wheat bread cubes
- 1 tablespoon olive oil
- 1 each red onion sliced
- 3 cups broccoli florets with tender stems, steamed and chopped,
- 1 x salt and black pepper to taste
- 1 x red hot pepper sauce optional, as needed
- 23 cup cheddar cheese
- Beat the eggs in a medium bowl until well blended, mix in the bread cubes.
- Set aside.
- In a 10-inch ovenproof nonstick pan, heat the oil over a medium high hight.
- Stir in the onions and cook until the onions are soft, 4 to 6 minutes.
- Stir in the broccoli and cook for another 2 minutes.
- Season with salt, black pepper and red hot pepper sauce if needed.
- Pour the egg and bread mixture evenly over the vegetables.
- Reduce the heat to medium-low, cover, and cook until the egg mixture is almost set, about 10 minutes.
- Sprinkle the cheese on top.
- Preheat the broiler.
- Place the skillet under the broiler about 2 inches apart, broil until the top is set and golden brown, about 2 minutes.
- Watch carefully, do not let the top burn.
- Serve hot with some chili sauce or red hot pepper sauce if desired.
