chilli coconut fish
- 1 white fish fillet
- 1 can coconut cream or thick coconut milk
- 1 bunch coriander
- 2 large fresh red chillies
- 2 cup rice
- preheat oven to 180C
- cut fish into large chunks a put into casserole dish, cover with coconut cream or milk
- chop coriander finely.
- Remove chilling seeds and chop finely.
- Add both to dish and stir.
- Season with pepper and salt.
- Put in oven and bake for 30-40 minutes.
- Serve on a bed of rice with fresh coriander.
