Coconut Soup With Chicken
- 4 Chicken thigh (cut in stripes)
- 1 can Coconut milk
- 2 bunch Bak choy
- 1 bunch Spinach
- 3 Red chillies (shredded, but leave 2 uncut)
- 1 box Shitake Mushroom
- 1 tbsp Fish sauce
- 3 small Lime leaves (shredded)
- 1 Chicken stock
- Heat the chicken stock in a big pot with chilli, coconut milk, mushrooms, lime leaves.
- Once it's boil, add chicken in and simmer for 15 mins
- Once chicken is cooked, add fish sauce, bak choy and spinach in and cook for another 2 mins.
- Done and serve with rice.
