Vince's Favorite Stuffed Bell Peppers
- 6 red peppers (green and yellow work just as well also)
- 1 lb ground beef (we like to use leanest possible)
- 1 large yellow onion, chopped
- 2 garlic cloves, chopped
- 1 (15 ounce) can tomato sauce (italian flavored is our favorite)
- 1 14 cups water
- 1 (8 ounce) envelope Good Seasonings Italian salad dressing mix
- 1 cup instant brown rice (white works fine too)
- parmesan cheese (we prefer 4C's shredded but I'm sure anykind would work fine, may be omitted depending on taste)
- Preheat oven to 400 degrees.
- Cut tops and bottoms from peppers and remove seeds (you may keep bottoms on peppers, we just prefer cut on both sides) and place in a pot of boiling water for approximately 5-10 minutes depending on how soft you like your cooked stuffed peppers to be.
- Pull peppers from water and place on tea towel or paper towels to drain.
- In a skillet over medium heat, brown ground beef with onion and garlic.
- Drain (otherwise, the stuffing will be very greasy, I've tried it both ways).
- Stir in 1 cup of the tomato sauce, 1 cup of the water, and dressing mix.
- Bring to a boil.
- Stir in rice.
- Cover and remove from heat.
- Let stand for 5 minutes.
- Mix remaining tomato sauce and remaining water in bottom of a 9 inch baking pan.
- Place peppers in baking dish and spoon filling into each one.
- (I typically have alot stuffing left so I really stuff the peppers and usually overfill them which gets no complaints from Vince).
- Sprinkle with handful of parmesan cheese and cover with foil.
- Bake 35-40 minutes or until peppers are tender.
- We like to scoop sauce from bottom of pan over served peppers.
- Enjoy!
