Pink Rice Pudding Recipe
- 1 pound fruit cocktail
- 1 (3 ounce.) cherry Jello
- 1/4 c. sugar
- 1 c. warm water
- 2 tbsp. lemon juice
- 2 c. cool cooked rice
- 1/2 c. minced nuts
- 1 c. heavy whipped cream
- Drain fruit cocktail, reserving syrup.
- Add in water to make 1 c.. Dissolve Jello and sugar in warm water.
- Add in syrup and lemon juice.
- Refrigeratetill thick sufficient to whip.
- Stir in fruit cocktail, nuts and rice.
- Mix in whipped cream.
- 1 c. raw rice makes 2 c. cooked.
