Fried Eggs With Veggie Chorizo
- 4 eggs
- 1 tbsp butter
- 1 tbsp vegetable oil
- 3 white mushrooms, sliced
- 1 1/2 tbsp green bell pepper, diced
- 1 tbsp yellow onion, diced
- 8 oz chorizo
- 1 1/2 tbsp roma tomatoes, diced
- In a medium skillet, add butter and melt on medium high heat.
- Add sliced mushrooms and cook on medium high for 5 minutes, until the moisture has sweated out, and the mushrooms are golden brown.
- Add in bell peppers and onions, and cook for 2 minutes until translucent.
- Add 1/4 of chorizo, and cook for 3 minutes.
- Add in tomatoes, and cook for 2 minutes.
- Meanwhile, using a large skillet add vegetable oil and fry your eggs on medium high heat.
- I fried mine for 7 minuted to make it fried hard.
- Season your eggs with salt and black pepper and serve your eggs topped with the veggie chorizo mix.
